I can't remember where I got this. It could have been Flylady, Allrecipes, or [livejournal.com profile] bonsvivants.

Mustard Artichoke Chicken

Ingredients:
2 pounds skinless chicken thighs
1 can cream of chicken soup
1 can artichoke hearts, drained and halved
1-2 Tbsp mustard (any kind)

Directions:
Put chicken in crockpot. Mix together remaining ingredients and pour over chicken. Cook on LOW for 8-10 hours.
Take cover off and cook on HIGH for 15 minutes to thicken sauce. Serve over brown rice with broccoli.

I made some substitutions - I used chicken tenderloins; cream of celery, since I didn't have any cream of chicken; and later, regular rice instead of brown. The end result was SO TASTY. Evan and I agree that we really like Crock-Pot meals because they're so moist and flavorful. I like them because I can come home to a nice dinner, instead of coming home and cooking a nice dinner. Plus, it's fun to anticipate the food all day and wonder how it's cooking. :) If anyone has any beloved Crock-Pot recipes, please share, because I want to keep using it!

Thanks for this! I'm thinking one of my first purchases (or Christmas requests) when I move will be a crock pot. How fun to come home to the smell of dinner cooking! It also takes away the temptation to just go out for dinner when you know something is ready and waiting at home.

I've had a crock pot and I've not used it. Maybe I should consider starting. There are some wonderful meal ideas out there. Let's be sure to keep sharing w/one another the good ones we come across!

Yes, I added enough water to cover everything. It was the perfect amount when it was done cooking, and it obviously didn't affect the taste. :)

It really is so easy. I mean, Crock Pot meals aren't salads or anything, but most of them aren't UNhealthy...and they are very nourishing.

I should send you a recipe Mom had made for the past two birthdays in our house...it's a chocolate cake made in the Crock Pot, and BOY is it good. The best chocolate cake I've ever had, hands down! It's soooo moist and delicious!
