Recipe Monday
Apr. 18th, 2005 02:20 pmOkay, due to this weekend's illness, I totally forgot about the recipe exchange that some of us are doing. Thankfully, I have a few good recipes saved on my work computer. :) Most of these serve two (in our house, anyway :)) but could probably stretch to serve four with a side dish or bread.
Best Salmon Bake
I found this on allrecipes.com. It's very easy and good.
1 pound salmon filets
1 small tomato, chopped
5 green onions, chopped
1/4 tsp. salt
1/4 tsp. pepper
1. Preheat oven to 350 degrees F.
2. Place salmon on a lightly oiled sheet pan or in a shallow baking dish, folding under thin outer edges of fillets for even cooking. Top salmon with chopped tomatoes and green onions, and season with salt and pepper.
3. Cook salmon in the preheated oven, uncovered, for approximately 20 minutes. Fish is done when easily flaked with a fork.
Broccoli Chicken Potato Parmesan
I got this off of a Campbell's soup can. Very good - just be careful with the potatoes, they can burn in the pan.
2 Tbsp. vegetable oil
1 lb. small red potatoes, sliced thinly
1 10-oz. pkg cooked chicken strips
2 cups fresh or frozen broccoli flowerets
1 can Broccoli Cheese Soup
½ cup milk
¼ tsp. garlic powder
¼ cup grated Parmesan cheese
1. Heat oil in skillet. Add potatoes. Cover and cook over medium heat 10 min., stirring occasionally.
2. Stir in chicken and broccoli.
3. Add soup, milk and garlic. Add to skillet. Sprinkle with cheese. Heat to a boil.
4. Cover and cook over low heat 5 min. or until done.
Yummy Turkey Patties
My college roommate invented this.
1 lb. ground turkey
¼ cup flour
½ cup milk
1 can cream of mushroom soup
1 small can mushroom buttons
Italian seasoning
Oregano
1. Preheat oven to 350 degrees.
2. Form ground turkey into patties and place in baking dish.
3. In a separate bowl, combine soup, flour, milk, and Italian seasoning. Stir until well blended.
4. Pour mixture over turkey patties. Sprinkle with oregano and garnish with mushroom buttons.
5. Bake for one hour.
6. Serve with rice and/or garlic bread.

My husband's grandfather told me this one over the phone. He invented it. :) It is sooooooo good.
2 chicken breasts
1 large can diced tomatoes
Mrs. Dash seasoning
Swiss cheese, shredded
1. Layer diced tomatoes and chicken in a casserole dish. Top with Mrs. Dash to taste.
2. Bake at 350 for one hour.
3. Sprinkle with shredded Swiss cheese, and put dish back in the oven for a few minutes if necessary to melt the cheese.
4. Serve.
Spinach Tortellini Soup
I don't remember where I got this recipe originally, but this is how I make it, from memory. I practically lived on this soup when I lived alone, and the only reason I don't now is because Evan doesn't like tortellini. :)
1/2-ish bag (16 oz?) frozen spinach
1 can chicken (or vegetable) broth
1/2 large bag frozen cheese tortellini
Italian seasonings, salt and pepper to taste
Shredded mozzarella or parmesan cheese
1. Defrost frozen spinach.
2. Empty chicken broth and about 1/2 can water into a medium-sized pot. Add seasoning, and bring to a boil.
3. Once it's boiling, add spinach and tortellini. Continue boiling until tortellini is done.
4. Ladle into a bowl and add more spices and cheese if you want. Yum yum.
