Last night Casey took me to a "cooking class" at the home of a lady from her church. Most of the actual cooking was done by 2 or 3 girls; the rest of us just ate. :) I made some Lemon Whippersnapper cookies, from the stickiest dough I have ever worked with in my life. I was afraid they would turn out badly, but they were wonderful! And so easy to make!

See, I am not a bad cook, but evidence points to the contrary. When I was living alone, I came home starving every day. I'm hypoglycemic: when my body says "Eat," I better obey. :P So my main objective was not "Make a fabulous gourmet meal," but "Make something that doesn't taste bad and cooks in under 15 minutes." Now Kathy does the cooking, because she enjoys it, is good at it, and has the time to do it. But I feel (and look) incompetent because I never cook.

However, I can bake. I have a repertoire of wonderful cakes and cookies (barring the Thanksgiving fudge-cake experiment, which Evan finally stopped talking about because it brought me to tears of shame). :) My favorite is the 4th of July cake. Maybe I will post the recipe soon.

So, tonight I am going to make up a batch of lemon whippersnappers. Because I am not Emeril, but at least I can strive for Duncan Hines. :)
